Okay, I did about an hour of stupid registry fixes, but I found a super easy way to go to AHCI mode in Windows 11.
1. Start-Run "msconfig"
2. Go to Boot tab
3. Check "Safe Mode" (minimal should be dotted)
4. Restart PC
5. Go into BIOS
6. Set SATA to AHCI
5. Start-Run "msconfig"
6. Go to Boot tab
7. Uncheck "Safe Mode"
8. Restart PC
